Leftover roast chicken. Chicken curry! Not an authentic curry. Madhur Jaffrey would not be proud!
Cook an onion and 3-4 cloves of garlic with olive oil until soft and sticky. Add cumin, coriander, turmeric, garam masala, chilli flakes and cook with the onion for a while bring the flavours out of the spices. Add the cooked chicken, peas (totally optional...) and a tin of tomatoes. Season to taste with salt and a little sugar (balances the acidity of the tomatoes) and simmer until the chicken is thoroughly heated through and it looks a nice colour!
Served with rice, yoghurt and the following- chop an onion and two tomatoes, squeeze over the juice of one lemon and season with salt. Trust me. Awesome. Only eat with someone who loves you.
